Bonjour à tous,

Aujourd’hui je vous parle une nouvelle fois de mon voyage au Japon, pour vous faire découvrir la boisson locale par excellence d’Okinawa, j’ai nommé l’awamori. Fabriqué à partir de distillation de riz, d’eau, de levure et d’un champignon noir appelé kōji, l’awamori contient en moyenne 30% d’alcool, mais je peux vous assurer que l’on peut vite monter à bien plus avec l’âge.

Pour découvrir cet alcool, nous sommes partis à la rencontre d’un producteur dans une distillerie à quelques kilomètres de Naha. En plus de produire cet alcool (que vous ne trouverez que sur l’île d’Okinawa, ils ne font pas d’exportation, et à part le magnum qui se trouve chez moi :p), ils réalisent également les contenant en fabriquant les poteries (quelques photos plus bas vous pouvez d’ailleurs me voir m’essayer à l’art de la poterie !).

Hi everyone,

Today I talk to you again about my trip to Japan for you to discover the local drink of Okinawa: “awamori”. Made from distilled rice, water, yeast and a black fungus called koji, awamori contains about 30% alcohol, but I can assure you that we can quickly climb to more with age.

To discover that alcohol, we went to meet a the owner of a Chuko distillery a few miles from Naha, Mr Oshiro. In addition to  alcohol production (you can only find awamori on the island of Okinawa, they do not export, apart from the magnum which is my home :p), they also carry the container by making the pottery (some pictures below you can also see me try my hand at the art of pottery!).

Après la visite de la distillerie, nous nous rendons dans un rooftop surplombant l’océan, à quelques kilomètres de l’aéroport de Naha. Une vue à couper le souffle sur l’eau bleue turquoise, nous profitons de quelques instants de tranquillité pour s’imprégner de cet endroit magique (MARE – Terrazzo Di Vista)

After the tour of the distillery, we went to a rooftop overlooking the ocean, a few kilometers from Naha Airport. With a breathtaking view of the turquoise blue water around us, we took a few moments of tranquility to enjoy this magical place (MARE – Terrazzo Di Vista)

 Le répit sera de courte durée, Josh le barman américain nous propose un défi : réaliser par équipe un cocktail ayant pour base l’awamori. C’est parti, on se croirait dans une émission de TopChef, nous n’avons que 10 minutes pour trouver les ingrédients qui vont composer notre cocktail, ainsi que le verre dans lequel nous le servirons. Josh nous rappelle le bon ration d’un cocktail : 2 onces d’alcool (ici l’awamori), 1 once d’acidité et 1/2 once de sucré.

Avec mon binôme Robbie, nous créeons un cocktail à base d’awamori, de citron vert, de thé vert au jasmin, de concombre et d’un peu jus d’ananas. Pour découvrir le résultat des votes, regardez la vidéo à la fin de l’article 😉

Josh, our american bar-tender/owner offers us a challenge: make a cocktail with awamori by team. Let’s go, it feels like a TopChef show, we only have 10 minutes to find the ingredients that will make up our cocktail and glass in which we will serve it . Josh reminds us of the good preparation of a cocktail: 2 ounces of alcohol (here awamori), 2 ounces of acidity and 1/2 once of sweet.

With my buddy Robbie, we create a cocktail based awamori, lime, green jasmine tea, cucumber and a little pineapple juice. To find the voting results, watch the video at the end of the article 😉
